**Note: People's Choice Award ($10.00 entry fee): Team furnishes an additional Boston Butt meat, Chicken or Ribs which is prepared according to all rules of the Bayou Bouef BBQ. The Team may choose one meat or all allowed in this category. Tickets will be sold; 1 for $2.00 or 3 for $5.00 to BBQ Cookoff goers and each ticket holder will be given a chance to sample a Team’s culinary best as prepared by each Team. Each Team will retain the ticket presented by the ticket holder for a individual sample. Each Participating Teams tickets will be counted at the end of the event and the best team's meat determined by the number of sampled entries!

**Note: Cake Contest ($10.00 entry fee): Any Team or individual may also enter The Cake Contest. Cakes will be judged on taste and originality. Bakers—enter your best recipe—entice the taste buds of the judges

** Note:Wild Game ($10.00 entry fee):  All wild game must be cooked according to competition rules. Wild Game is classified as Deer, Duck, Elk,Squirrel etc. ( NO FISH )

Bayou Boeuf BBQ Cookoff Rules

Saturday, May 3, 2014                                 No motorized vehicles allowed on grounds after setting up!
Haas Auditorium, Bunkie, LA                             Setup can begin at 6:00 a.m. May 3, 2014

 

1.         All meat will be inspected before cooking at a designated inspection area, upon the arrival of each team. Uncooked, unseasoned, and un-marinated meat will be inspected Saturday morning. All meat must be stored in separate containers, held at a temperature of 40 degrees or below. After inspection, the meat can be seasoned and or marinated.

2.         Cooked meat must be held at a temperature of 140 degrees or higher.

 

3.         No food or drinks are to be given or sold to the public other than Team’s participating in the People’s Choice competition.  Any teams giving food or drinks away will be disqualified.

 

4.         Styrofoam dishes will be provided to each team at the Judges' stand at the time of the meat inspection. Each dish will have a team number and should have 3 pieces of meat per container to be judged. A separate container will be provided to those entering the sauce contest.

5.     Turn-in-times are: Sauce- 12:00;Chicken-1:00;Ribs- 2:00; Wild Game - 2:30, and Boston Butt- 3:00. Cooks will have a 10 minutes window ( 5 minutes before, 5 minutes after) the posted time.

6.    Awards will be given to the top 3 rankings in the meat categories and the top 3 in sauce. A "GRAND CHAMPION " award for the best combined score in chicken, ribs, and Boston Butt, will be given. Teams must compete in all 3 categories to be considered for Grand Champion.

7.    No gas grills. Charcoal, wood, or cooking pellets only. The cook and all food-handling assistants must wear aprons and hats. No smoking or chewing tobacco during food preparation times. Cleanliness of the cook, assistants, and contestants are required.

9.  After cooking, ash cans will be provided to dispose of all ash. Please keep Bunkie and your area clean.

10. All grill fires must be contained. No open fires on the ground. Use charcoal starter (chimney) or start fire in cooker. Gasoline will not be used.

11. Water will be accessible.

12. Teams must supply everything they need in order to compete. Don't forget the tent!

13.  NO PETS !

14.  Head cook and all assistant cooks must be 18 years of age to compete in the Cookoff.

15.  Failure to follow "our" rules will result in your team being disqualified.
